SHEPHERD'S PIE 
1 lb. ground beef, lean
1 med. onion, diced
2 lg. carrots, sliced or diced
1 oxo cube
1/2 c. frozen peas
1 c. water, boiling
8 potatoes, cubed
Butter
Salt and pepper to taste
Parmesan cheese, grated
Brown gravy

Brown ground meat and onions in frying pan. Drain fat off. Add 1 oxo cube to 1 cup boiling water. Mix and add to meat and onions. Season to taste. Add carrots, cover and cook until carrots are just beginning to get tender. In meantime boil potatoes, then mash and add butter. (Don't add milk, then need to be firm.)

Put meat and vegetables and liquids into casserole dish, add peas and mix in. Cover with mashed potatoes and sprinkle top with Parmesan cheese. Bake at 350 degrees for 1 hour or until top is browned and slightly crunchy. Serve with gravy on top.
