APRICOT BARS 
1 c. dried apricots
1 tbsp. butter
2 eggs
1 c. sugar
1 tbsp. lemon juice
1 c. sifted flour
1 tsp. baking powder
1/2 c. raisins
1/2 c. pineapple, drained
Powdered sugar

Cook dried apricots in water about 10 minutes; drain and cut in half; set aside. Cream butter, and add eggs, beat well. Add sugar and cream until light. Add lemon juice. Sift into above mixture flour and baking powder; beat well. Add raisins and diced pineapple. Add apricots and mix well. Bake at 350 degrees for 45 minutes or until brown in a 8 x 8 x 2 inch pan. Dust with powdered sugar while still warm.
