OMA'S RED CABBAGE | |
This is a hot vegetable dish that is great served with roast pork, turkey, or any other roast type meal. It adds color and has a very unique and pleasing taste. Even if you don't like cabbage, you and the kids will love this German dish. 1 sm. red cabbage, grated, sliced very finely 3/4 c. water 3 tart apples, peeled, and cut into sm., thin slices 1/4 c. brown sugar 1/4 c. vinegar 1/2 tsp. cinnamon 1/4 tsp. allspice and ground cloves (cloves can be omitted if you do not have any) 2 tbsp. butter, split into two 1 tbsp. portions (Or put into the food processor so that it resembles coleslaw). Bring all ingredients except the 1 tablespoon of butter to a boil. Turn stove down, and simmer for 45 minutes or until cabbage is tender. Stir in remaining butter and serve hot. This dish serves approximately 8 as a side vegetable and can be made ahead of time and stored in the refrigerator for up to a week. It reheats well in the microwave or on medium heat on the stove. |
