BAKED BEANS | |
1 lb. pkg. great northern beans 6 heaping tbsp. dark brown sugar 6 slices of bacon 1 level tbsp. salt 1/2 tsp. black pepper 1 gallon size brown bean pot Look over beans and soak overnight with water to cover. Next morning, add enough water to cover beans and boil 1 hour. Skim off water and let stand 10 minutes. Meanwhile put 3 slices of bacon in bottom of earthenware bean pot. Add 3 tablespoons brown sugar and 1/3 of cooked beans. Add salt and pepper. Add enough hot water to cover. Put cover on pot (pot will be almost full). Bake at 250 degrees for 6 hours. At end of 2 hours, check to be sure there is still plenty of liquid. Bake for 2 more hours. When finished the beans should be very tender and the entire pot should be full and be moist not dried out except for maybe a very few on top. Serve directly from the pot. They will keep hot for quite a while in the pot. Serve with homemade piccalilli. |
