FRESH BLUEBERRY PIE 
Baked pie shell
3/4 to 1 c. sugar
1 tbsp. butter
4 c. fresh blueberries
1/3 c. water
Cool Whip
1 tbsp. orange extract
2 tbsp. cornstarch

Simmer 1 cup blueberries with the water and sugar about 10 minutes. Mash or puree and return to pan. Add 2 tablespoons cornstarch that has been dissolved in a little water. Cook until thick and clear. Remove from heat and add butter and orange extract.

Add the remaining 3 cups of blueberries. Pour into baked shell and chill. Add Cool Whip to top before serving.
