CREOLE MINI MEAT LOAVES | |
1 lb. lean ground beef 1 c. fresh bread crumbs (2 slices) 1 egg, slightly beaten 5 tsp. Wyler's beef flavor instant bouillon 2 tbsp. vegetable oil 1/2 c. chopped onion 1 tbsp. cornstarch 1 (14 1/2 oz.) can stewed tomatoes, undrained 1/2 c. water 1 tsp. oregano 1 tsp. sugar 1/4 tsp. hot pepper sauce 1 green pepper, cut into squares Combine meat, crumbs, egg, and 1 teaspoon bouillon; mix well. Shape into 4 loaves. In large skillet, brown loaves in oil. Remove from skillet. Cook onion in drippings until tender. Stir in cornstarch until smooth. Add tomatoes, water, and seasonings. Bring to a boil. Simmer 15 minutes. Add loaves; cover and simmer 15 minutes. Add pepper. Cook 5 minutes. Serve over rice or mashed potatoes. Refrigerate leftovers. |
