SQUASH CASSEROLE 
2 cups squash, cooked
1 onion, chopped
2 slices bread
1/2 cup milk
3 slices cheese, grated
3 tbsp. oil
2 tbsp. butter
2 eggs
bread crumbs

Boil squash in salted water until tender. Beat with mixer. Soak bread in milk and mix with squash. Sauté onion and bell pepper in oil. Beat eggs, add to squash gradually. Add sautéed onion and butter and grated cheese. Put in casserole dish and sprinkle with bread crumbs.

Bake at 350°F for 35 minutes.

Makes 4-6 servings.
