FISH CHOWDER 
1 lb. fresh fish filets
1/4 c. chopped salt pork or bacon
1/4 - 1/2 c. chopped onion
2 c. hot water
3/4 c. celery (finely chopped)
2 c. potatoes (finely diced)
3 c. milk
1 tsp. salt
2 tbsp. butter
Pepper
Parsley

Cut fish into 1 inch cubes. Fry salt pork or bacon until brown. Add onions and brown slightly. Add water and potatoes and cook for 5 minutes or until potatoes are partially tender. Add fish and celery. Cook until fish flakes easily with a fork. Add milk, seasonings, and heat. Serve immediately topped with snipped parsley.
