PUMPKIN ROLLS 
3 eggs
1 c. sugar
1 tsp. lemon juice
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. salt
2/3 c. pumpkin
3/4 c. flour
2 tsp. cinnamon
1/2 tsp. nutmeg

Beat eggs. Gradually add remaining ingredients. Mix together and pour into 10"x15" greased and floured jelly roll pan. Sprinkle one cup chopped nuts over the top and bake 15 minutes at 375 degrees.

Turn out onto a towel and sprinkle with powdered sugar. Roll the pumpkin roll jelly roll fashion. When cool, unroll it and frost it with one cup powdered sugar, 4 tablespoons butter and 6 ounces cream cheese mixed with 1 teaspoon vanilla. Roll the roll back up and slice to serve.
