APPLE CRUMB PIE 
PIE:

Pastry for 9" pie
3/4 c. sugar
2 tbsp. flour (or use tapioca flour)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
1 tbsp. grated lemon peel
5 c. pared & sliced golden delicious apples
1 tbsp. lemon juice
2 tbsp. butter

Preheat oven to 400 degrees. Roll out pastry. Place in 9 inch pie pan. Combine sugar, salt, cinnamon, nutmeg and peel in a bowl. Sprinkle bottom of pie crust with tapioca. Add apples to mixture and toss to coat evenly. Arrange apples in pie plate. Sprinkle with lemon juice and dot with butter.

CRUMBS:

1/4 c. Crisco
1/4 c. butter
2 c. flour
1 c. sugar
1 tbsp. salt
2 tbsp. cinnamon

Work with fingers (pressing together hard). Crumble over apples. Put pies in the oven 1/3 way up. Bake 1/2 hour at 400 degrees then lower to 375 degrees for 1/2 hour. Cover pie with aluminum foil after 20 minutes.
