SHARON OLIVER'S SPINACH SALAD 
1/2 tsp. grated orange rind
1/4 c. orange juice
1/2 c. vegetable oil
2 tbsp. sugar
3 tbsp. red wine vinegar
10 oz. fresh spinach, well washed and torn into bite size pieces
1 sm. cucumber, pared and thinly sliced
6 med. scallions
(3 oz.) thinly sliced 11 oz. can mandarin oranges, drained

In a salad bowl whisk together orange rind, orange juice, oil, sugar and vinegar until blended. Just before serving add spinach, cucumber, scallions and mandarin oranges. Toss well with the dressing. Makes 6 to 8 servings.
