MIKE'S TOASTED NUT OLIVE
SANDWICH
 
An easy, quick, economical vegetarian treat, that's decadent!

any grain bread (whole wheat is great)
spreadable butter (tastier than vegetable spray)
salad olives (sliced green olives with pimentos)
cashew halves (or crushed cashews)
lettuce
mayonnaise

Lightly butter the outside of 2 pieces of bread (the hardest part). Lay open-faced on pan or grill.

Spoon some olives on one slice of bread, spoon some cashews on the pan/grill. Start toasting at medium heat, stir cashews around for 1/2 minute. Remove cashews from pan and load them on your olives.

At this point, check the unloaded side of bread for your preferred toast level (it gets messy moving around the loaded side). Once done, carefully remove bread from pan.

Load it up with mayonnaise and lettuce, slap it together... Enjoy!

Cook time: 2-3 minutes; Prep time: even less; Makes 1 sandwich.
