HAWAIIAN PINEAPPLE DELIGHT 
1 can (13 1/2 oz.) pineapple, sliced
1 pkg. unflavored gelatin
3 tbsp. water
3 eggs
1/2 c. sugar
2 tbsp. instant coffee powder
1 c. whipping cream

1. Save a few pineapple slices for garnish. Cut the remaining slices in small chunks. Drain.

2. Soften gelatin in water. Stir over hot water until dissolved.

3. Beat eggs in large bowl of electric mixer until foamy.

4. Add sugar, a little at a time and continue beating until thick. Add coffee powder and pineapple chunks.

5. Whip cream until almost stiff. Add dissolved gelatin to egg mixture. Then fold in whipped cream.

6. Turn mixture into a nice glass serving dish. Chill 3 to 6 hours or until set. Garnish with pineapple slices.
