YOGURT QUICHE 
1 1/2 c. shredded cheese
2 tbsp. thin sliced green onions
4 eggs, lightly beaten
1 c. plain yogurt
1 tbsp. cornstarch
1/2 c. milk
1/2 tsp. salt
1/2 tsp. nutmeg
2 tbsp. grated Parmesan cheese
1 pkg. frozen broccoli, cut up or spinach, cut up
1 deep pie crust

Thaw spinach or broccoli. Drain. Combine with shredded cheese and onion. Put into pie shell. Combine remaining ingredients except Parmesan cheese. Pour over vegetable mixture in pie shell. Top with grated Parmesan cheese. Bake at 375 degrees for 40-50 minutes until a knife inserted in the middle comes out clean. Cool slightly before serving.
