TAMALE PIE 
1 box Stove Top corn bread stuffing mix
1/4 c. (1/2 stick) butter, cut in pieces
1 1/2 c. HOT water (boiling)
1/2 c. chopped green peppers
1 c. chopped onion
2 tbsp. oil (Puritan)
1 lb. ground beef
1 (16 oz.) can tomatoes
1 (16 oz.) can whole kernel corn, drained
2 tbsp. chili powder
1 c. grated Cheddar cheese
1 can (16 oz.) pitted sliced olives

Combine contents of vegetable seasoning packet, butter and hot water in a 1 1/2 quart bowl; stir to blend and melt butter. Add stuffing crumbs and stir to moisten. Let stand until water is absorbed. Meanwhile, saute green peppers and onion in oil in large skillet until tender (not brown). Remove and set aside.

Stir in ground beef and brown. Add tomatoes, corn, chili power, green pepper and onion. Mix well. Stir in grated cheese and olives. Pour mixture in a 2 1/2 or 3 quart casserole or a 9 x 13 inch baking dish. Top with stuffing mixture. Spread evenly over top. Bake uncovered at 375 degrees for 30 to 40 minutes. Serves 6 to 8. Great party dish - men really like this dish.
