SLIM AND SAVORY SPINACH POTATO
SOUP
 
4 c. chicken broth
3 med. leeks (white part only) sliced or 3 med. onions, chopped
6 oz. spinach, trimmed & chopped
3 c. potatoes, cubed
2 tbsp. Molly Mcbutter all sour cream & butter flavor sprinkles
Fleshly ground black pepper

Bring broth leeks and spinach to a simmer. Cover and cook 5 minutes. Add potatoes and cook covered 20 minutes or until potatoes are tender. Puree half the mixture; return to saucepan. Stir in Molly Macbutter and pepper. Serve hot or cold. Serves 6, about 146 calories each. Preparation time: 15 minutes. Cooking time: 30 minutes.
