GRATED CARROT MEATLOAF 
2 slices firm grain bread, broken in pieces
3/4 c. milk
2 1/2 lbs. lean ground beef or a mixture of beef and turkey
3 eggs or 6 egg whites
2 lg. carrots, finely grated
2 tbsp. prepared horseradish
1 env. onion soup mix

Mix together. Put in 9 x 5 inch loaf pan. Spread topping on top. Bake at 350 degrees for 1 1/2 hours.

TOPPING:

1/4 c. catsup
2 tbsp. brown sugar
2 tbsp. Dijon mustard
