EGGLESS RICE PUDDING 
1 (15 oz.) can fruit cocktail

Drain juice from cocktail and add enough water to juice to make 2 cups. Heat to boiling and pour over:

Stir until dissolved. Chill until partially set, stir in fruit cocktail. Add 1 1/2 cups cooked rice and 2 tablespoons lemon juice. Mix well. Fold in 1 (8 oz.) Cool Whip. Let set.
