OVEN FRIES 
3 med. unpeeled, baking potatoes, about 1 1/2 lb.
2 tsp. vegetable oil
1/4 tsp. salt
1/8 tsp. pepper
Vegetable cooking spray

Scrub potatoes. Cut into 3 1/2 x 1/2 x 1/2 inch strips. Place in a bowl. Cover with cold water. Let stand 30 minutes; drain. Pat dry with paper towels.

Combine oil, salt and pepper in a large bowl. Add potatoes, and toss well to coat. Arrange in a single layer on a baking sheet coated with cooking spray. Bake at 475 degrees for 25 minutes or until tender and browned, turning potatoes after 15 minutes.

Yields 6 servings (98 calories per 1/2 cup serving).
