DOUBLE STUFFED POTATOES 
4-5 med. potatoes
8 oz. sour cream
1/4 stick butter
6 oz. med. Cheddar cheese

Bake (microwave) potatoes until 3/4 done. Remove from oven, slice off 1/4 of potatoes, lengthwise. Scoop out insides into bowl. Mix sour cream, butter, 5 ounces of cheese and potatoes. Put mixture back into the potatoes and top with remaining cheese. Continue to cook until done and cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
