QUICK MEATLOAF 
I made this creation one rainy day that I ran out of eggs and couldn't get to the store.

2 to 3 lb. hamburger meat
1-2 cups dry oatmeal
1 (15 oz.) can tomato sauce, divided
3-4 tbsp. soy sauce
1 onion, chopped
garlic salt
1 1/2 tbsp. oil

DRY SEASONINGS:

pepper
oregano
basil

Preheat oven to 400°F.

In a large bowl combine hamburger meat and dry seasonings, mix well with either with your hands or a potato masher. Add in small handfuls of oatmeal until there is a good even mix with the meat. Flatten out the meat mixture in the bowl, add soy sauce to the mixture in a circle and let this sit.

Meanwhile chop up onion to your liking. Add onion to a little bit of garlic salt and oil in a pan. Sauté onions until browned. Put the cooked onions in the meat mixture right away. Use about 1/4 cup tomato sauce.

Use your potato masher to mix in the onions. Place mixture in loaf pan or baking dish.

For the glaze, mix together 1 tablespoon soy sauce and about 1 cup tomato sauce. Put that on top of the meatloaf.

Bake at 400°F for 1 hour covered, then uncovered for 5 to 10 minutes to brown the top.

Best served with mashed potatoes!
