RICE PUDDING 
4 cups whole milk
1 cup sugar
1 cup Carolina rice
2 tsp. vanilla extract
1/2 cup raisins (optional)
cinnamon, for sprinkling

This should be cooked on the stove top.

In a large pot warm milk and sugar for approximately 5 minutes on medium heat, then add rice and vanilla. Stir frequently for 10 minutes then reduce heat to low and cook for 1 hour (approximately), stirring frequently. Make sure rice does not stick to bottom. When rice is cooked remove from heat and pour into glass bowl, let stand for 1/2 hour then refrigerate.

Note: if adding raisins, put in when rice is almost cooked.

When ready to serve sprinkle cinnamon on top.
