ALL FOWL OMELETTE 
2 turkey eggs or 3 fresh chicken eggs or 2 chicken eggs and 1 duck egg
2 lg. mushrooms, diced
2 shallots, diced
3 tbsp. shredded extra sharp Cheddar cheese
2 tsp. salsa (El Charro sauce on hand is easiest and I have found best)

Saute shallots and mushrooms together on medium heat in butter for 3 minutes. Use copper or Silverstone coated cast-iron pan. Melt 1 tablespoon butter in pan. Pour in eggs after beating until smooth and consistent in color. Sprinkle mushrooms and shallots in center of eggs and sprinkle cheese on top. Then spread salsa as evenly as possible.
