STRAWBERRY-RHUBARB CRUNCH 
1 c. flour
3/4 c. old-fashioned oatmeal
1 c. packed brown sugar
1/2 c. melted butter
1 tsp. cinnamon
1 c. granulated sugar
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla
3 c. rhubarb, chopped
1 c. halved strawberries

Heat oven to 350 degrees. Mix flour, oatmeal, brown sugar, butter and cinnamon together until crumbly. Press half of the crumb mixture into bottom of a 9-inch baking pan.

Mix granulated sugar, cornstarch, water and vanilla in a medium saucepan. Cook and stir over medium heat until thick and clear, about 5 minutes. Set aside.

Mix rhubarb and strawberries together gently. Place tossed fruit over the crumb mixture in the prepared pan. Pour liquid over fruit; top with remaining crumbs.

This has got to be one of the best recipes I have made! I cooked it in the oven for approx. 30min. I also doubled it and placed it in a 9x13 pan!
