SUNSHINE SALAD 
1 pkg. lemon Jello
1 1/4 c. hot water
1/2 tsp. salt
9 oz. crushed pineapple
1 c. shredded carrots
Crisp lettuce

Dissolve Jello in hot water, adding salt and stirring. Let set for a while. Add carrots and pineapple. Chill. Serve on lettuce leaf.
