SWEET AND SOUR SPARERIBS
(CHINESE)
 
2 lbs. spareribs
2 tbsp. flour
1 tsp. soy sauce
2 tbsp. red soy sauce (if red sauce is not available, then measure 3 tsp.
regular soy sauce)
2/3 c. vinegar (white)
1 1/2 c. water
2 tbsp. brown sugar
4 slices pineapple rings
1 tbsp. vegetable oil
2 tsp. salt
1 clove garlic, crushed
1 piece ginger (crushed) if fresh ginger is not available, then substitute
powdered ginger

Cut spareribs into one inch length pieces, mix with flour and soy sauce. Combine oil with garlic and ginger then brown spareribs in mixture. Add vinegar, water, salt, and sugar to above mixture. Allow to cook over low heat for one hour (if it becomes dry add more water). If a thick sauce is preferred, combine 2 tbsp. cornstarch to mixture with 1/2 cup water. Garnish with pineapple rings.
