SUE'S HEALTH BREAD | |
1 tbsp. yeast 1/2 c. lukewarm water 1 tbsp. sugar 3 eggs or 5 egg whites 1/2 c. butter 1 1/4 c. lukewarm water 1 c. dry milk powder 1/2 c. cracked wheat 1 c. soybean flour 4 tbsp. wheat germ 1/2 c. sugar 1 tsp. salt 2 c. white flour Combine first 3 ingredients and let stand. Combine rest of the ingredients in a bowl (holding back 2 cups of flour to add as needed). Add yeast mixture. Knead until dough is smooth and satiny, adding as much of the 2 cups of flour as necessary. Let rise until double in bulk. Punch down and let rise again. Divide into 3 portions, place in bread pans and let rise again. Bake in a 375 degree oven for 40-50 minutes. If formed into rolls, bake at 375 degrees for 15 minutes. |
