LOUISIANA PRALINE CAKE 
1/2 c. (1 stick) butter
2 eggs
1 1/2 c. boiling water
1 c. quick cooking oatmeal
1 c. brown sugar
1 c. white sugar
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped pecans
1 tsp. grated orange rind

Combine oatmeal and water and let stand for 15 minutes. Grease and flour 9x13x2 inch pan. Preheat oven to 325 degrees.

Beat butter, eggs, sugars until smooth. Add oatmeal, flour, soda and salt, orange rind and nuts. Beat for 2 minutes. Bake for 45 to 60 minutes. Add topping and return to oven on broil for 2 minutes.

PRALINE TOPPING:

Combine 1/4 cup brown sugar, 3 tablespoons butter, 2 tablespoons whipping cream, and 1 cup chopped nuts. Pour over hot cake and broil 2 minutes.
