SHRIMP WITH GARLIC AND PARSLEY 
2 1/2 to 3 lbs. lg. shrimp
3 tbsp. olive oil
3 tbsp. butter
Salt and pepper to taste
4 cloves garlic, minced
1/2 c. minced parsley
Juice of 1/2 lemon

Clean and devein shrimp, lay on towel to dry. Heat olive oil and butter in a large skillet. Place one layer of shrimp in the skillet. Season with salt and pepper. Saute for 2 minutes. Turn and saute for 1 minute. Transfer to heated serving dish and keep warm. Saute remaining shrimp in the same manner. Add the garlic and parsley to oil and butter remaining in the skillet. Heat and stir for a few seconds. Squeeze the lemon juice into the skillet. Pour sauce over the shrimp and serve.
