APPLESAUCE DOUGHNUTS 
3 1/3 c. all purpose flour
3/4 c. sugar
2 eggs
3/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1 c. applesauce
2 tbsp. shortening
3 tsp. baking powder
1/2 tsp. salt
Vegetable oil

Beat 1 1/3 cups of the flour and remaining ingredients, except oil, in a large mixer bowl on low speed, scraping bowl constantly until blended. Beat on medium speed, scraping bowl occasionally 2 minutes. Stir in remaining flour. Cover and refrigerate at least 1 hour.

Heat oil (2 to 3 inches) to 375 degrees in deep fat fryer or 3 quart saucepan. Turn half of dough onto well floured cloth covered board; roll around lightly to coat with flour. Roll dough gently 3/8" thick. Cut with floured doughnut cutter. Repeat with remaining dough.

Slide doughnuts into hot oil with wide spatula. Turn doughnuts as they rise to surface. Fry until golden brown, 1 to 1 1/2 minutes on each side. Remove carefully from oil (do not prick surfaces); drain. Serve plain, sugared or glazed. Makes 1 1/2 dozen doughnuts.

If using self rising flour, omit baking powder and salt. NOTE: Do not double this recipe.
