BACON/CHEESE MUFFINS 
(Sam has shared several tasty recipes with me--including this one! I have to say this is one of MY favorites.)

2 c. self-rising flour
1 c. milk
1 egg
1/4 c. oil
1/8 tsp. cayenne ground pepper
1/4 tsp. salt
1/4 c. sugar
2/3 c. grated mild Cheddar cheese
7 strips crisp bacon, crumbled

Mix first 7 ingredients; fold in cheese and bacon. In well-greased muffin tin, bake 20 minutes in a 400 degree oven. Makes 11 to 12 muffins; serve warm.
