EASY PEANUT BUTTER COOKIES 
1/4 c. soft shortening
1/4 c. butter
1/2 c. peanut butter
1/2 c. sugar
1/2 c. firmly packed brown sugar
1 egg
1 1/2 c. all-purpose flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Cream shortening, butter and peanut butter; add sugars and egg and beat until smooth. Combine dry ingredients and stir into creamed mixture. Chill dough. Roll into balls the size of large walnuts. Place 3 inches apart on ungreased cookie sheets. Flatten with fork dipped in flour (or sugar), making criss cross patterns. Bake at 375 degrees for about 10 to 12 minutes. Yield: about 3 dozen.
