THREE LAYER FRUIT CAKE 
3 c. plain flour
2 c. sugar
2 eggs
1 c. nuts
1 c. raisins
1 tsp. vanilla
1 c. coconut
1 orange, chopped
1/2 c. butter
1 c. buttermilk
1 tsp. baking soda
1/2 tsp. salt
1 tsp. allspice
1 c. strawberry jam
2 apples, chopped

ICING:

2 c. sugar
1/2 c. butter
1 to 2 c. raisins
1 tsp. vanilla
1 c. Pet milk
2 c. coconut flakes
4 egg yolks
2 c. nuts
1 c. crushed pineapple

Sift together flour, soda and salt. Set aside. Beat together eggs, sugar, butter, allspice, jam, vanilla and buttermilk. Add nuts and dried fruit. Blend thoroughly. Pour into greased and floured cake pans. Bake at 325 degrees for 35 to 40 minutes.

ICING: Lightly beat egg yolks. Mix in milk and beat again, then add butter and vanilla. Put into a heavy saucepan. Cook until thick (about 10 minutes). Remove from heat, add the nuts and fruits. Cool and spread on the cake.
