SWEET POTATO SOUFFLE 
3 c. mashed potatoes
1 c. sugar
2 eggs
1 tsp. salt
1/2 c. coconut
3/4 tsp. vanilla
1/2 c. milk

Mix together and place in a casserole dish.

TOPPING:

1 c. brown sugar
1 c. pecans
1/2 c. flour
1 stick butter

Mix sugar, flour, and nuts. Put over potato mixture. Melt butter and pour over all. Sprinkle with coconut. Bake at 400 degrees for 30 minutes.
