BEEF AND NOODLE CASSEROLE
(MICROWAVE)
 
1 1/2 lbs. ground beef
1/2 c. finely chopped green onion
2 tsp. dried basil
1 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. Parmesan cheese
1 (14 to 16 oz.) can tomatoes, broken up
1 can condensed tomato soup, undiluted
8 oz. kluski egg noodles, cooked to firm stage and drained
1/2 c. chopped pitted black olives

Crumble ground beef into a 3-quart casserole. Add onions, 1 teaspoon basil, the garlic, salt and pepper. Cover with lid or waxed paper. Microwave on high 5 to 7 minutes, stirring twice to break up the meat. Until it loses its pink color. Discard excess liquid in bottom of casserole.

Stir in cheese, tomatoes with their liquid, the tomato soup, and remaining 1 teaspoon basil. Gently stir in noodles. Cover and microwave on high 4 to 6 minutes. Stir, then top with chopped olives. Cover and microwave on high 2 to 3 minutes longer. Let stand covered 3 to 5 minutes. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
