SOUTHWESTERN COD 
2 lb. cod fillet, fresh
2 tsp. ground cumin
1 1/4 tsp. coriander, ground
1 3/4 tsp. chili powder
1 1/4 tsp. oregano, whole dried
1 1/4 tsp. thyme, whole
1/8 tsp. ground clove
1/8 tsp. ground allspice
1/8 tsp. ground cinnamon
8 oz. lime butter
2/3 c. all purpose flour
12 oz. Texas Tartar Sauce

Mix ingredients 2 through 9 together the seasoning mix. Cut fresh cod into 3 ounce portions and dust with seasoning mix and then flour. Saute in olive oil or pan bake. Cut lime butter and place on top of cooked fish. Serve with Texas Tartar Sauce on the side.

LIME BUTTER:

1 stick butter
1 tsp. chopped shallots
1 tsp. lime juice
Paprika
