SNOW CAPPED BROCCOLI 
2 (10 oz.) pkg. broccoli spears, blanched
1 tbsp. melted butter
2 egg whites
1/4 tsp. salt
1/3 c. mayonnaise
Grated Parmesan or Romano cheese

In a 9-inch pie plate, arrange broccoli with spears pointing toward the center. Brush with melted butter. Beat egg whites and salt until stiff peaks form. Fold in mayonnaise. Spoon egg mixture over center of spears not covering flowers. Sprinkle cheese on top. Bake at 350 degrees for 12 to 15 minutes.
