SWISS MEAT LOAF 
1 egg
1/2 c. evaporated milk
1 tsp. rubbed sage
1 tsp. salt
1/2 tsp. black pepper
1 1/2 lb. ground beef
1 c. cracker crumbs (or bread crumbs)
3/4 c. grated Swiss cheese
1/4 c. finely chopped onion
2-3 strips bacon, cut into 1" pieces

Preheat oven to 350 degrees. Beat egg in a large bowl. Add evaporated milk, sage, salt and pepper; mix well. Add beef, crumbs, 1/2 cup of the Swiss cheese and the onion; blend. Form into loaf and place in 2 quart rectangular baking dish. Place bacon pieces on top. Bake for 40 minutes. Sprinkle remaining 1/4 cup cheese on top. Bake 10 minutes more.
