VANILLA REFRIGERATOR COOKIES 
1 c. sugar
1 1/2 tsp. vanilla
3 c. all-purpose or whole wheat flour
1/2 tsp. baking soda
1 c. butter, softened
2 eggs
1 tsp. salt

Mix sugar, butter, vanilla and eggs. Mix in remaining ingredients. Divide dough into 3 equal parts. Shape each part into a roll 1 1/2 inches in diameter and about 7 inches long. Wrap; refrigerate at least 4 hours but no longer than 6 weeks.

Heat oven to 400 degrees. Cut rolls into 1/8 inch slices. Place about 1 inch apart on ungreased cookie sheet. Bake until set, 8 to 10 minutes. Immediately remove from cookie sheet. (About 7 dozen cookies)
