SHRIMP SCAMPI | |
2 lb. med. shrimp 1/4 lb. butter 1/2 c. olive oil 1 tbsp. lemon juice 1/4 c. finely chopped scallions 1 tbsp. chopped garlic 1 tsp. salt 1 tsp. pepper 4 tbsp. finely chopped parsley Preheat broiler to highest temperature. Use a pan big enough to hold shrimp in one layer. Melt butter. Stir in olive oil, lemon juice, scallions, garlic, salt and pepper. Add peeled shrimp and coat completely with butter mixture. Broil 3-4 inches from heat for 5 minutes. Then turn and broil 4-10 minutes on other side. Sprinkle parsley on and serve over rice with lemon slices. Serves 4. |
