FETTUCCINE WITH HAM AND PEAS | |
1 onion, chopped fine 3 tbsp. butter 2 c. mushrooms, sliced thin 1 1/2 c. heavy cream 1/2 tsp. black pepper 2 c. cooked ham, cut in 3 x 1/4 inch strips 1 (10 oz.) pkg. frozen peas (thawed and drained) 12 oz. pkg. fettuccine 1 c. Parmesan cheese Boil large pot of water and cook fettuccine as directed on package. Saute onion in butter in a large skillet until softened, but not brown, about 5 minutes. Stir in cream; simmer 2 minutes. Add ham and peas. Cook until heated through, about 3 minutes, stirring occasionally. When fettuccine is tender but still firm, drain in colander, then place in a serving bowl. Stir Parmesan and pepper into sauce in skillet. When melted, pour sauce over fettuccine. Toss and serve immediately. |
