SWEET POTATO CROQUETTES 
1 (1 lb. 13 oz.) can sweet potatoes
Dash of salt
4 slices pineapple, drained
2 tbsp. butter, soft
1 c. corn flakes

Preheat oven to 350 degrees. Place cereal between 2 pieces of wax paper. Roll with rolling pin to crush into semi-fine crumbs. Drain and mash sweet potatoes. Add salt and butter. Mix together. Form into croquettes. Roll croquettes in crumbs. Place pineapple in baking pan and place each croquette on top of a slice of pineapple. Bake for 30 minutes. Serves 4.
