QUICHE 
2 deep dish pie shells
1 tbsp. butter
1 c. chopped onions
12 crisp bacon slices, drained and crumbled
2 c. mixed, Swiss, cheddar and jack cheese
7 eggs
4 c. light cream
Dash of nutmeg, sugar, cayenne, and pepper
1 tsp. salt
1/2 can French fried onion rings

Any of or a combination of the following may be added to egg mixture: sliced mushrooms, green or red bell pepper (chopped), green onions, grated and drained zucchini, etc. asparagus spears.

With hot butter in shallow skillet, saute onions until golden. Drain, turn into bottom of pie shell, add bacon, sprinkle with cheese. Beat eggs with nutmeg, sugar, cayenne, and salt and pepper. Stir in cream. Pour into prepared pie shell. Lay asparagus spears on top of egg mixture in spoke fashion. Bake at 350 degrees for 45 minutes or until silver knife inserted near center comes out clean. 15 minutes before done, sprinkle onion rings on top. Serves 12.
