PEACH COBBLER 
1/3 c. sugar
2 tbsp. buttermilk pancake mix
1 c. peach juice

Combine sugar and pancake mix with 1 cup juice drained from #2 1/2 size can sliced peaches. Cook over low heat until thickened. Place drained peach slices with 1 tablespoon lemon juice and thicken sauce in 1 1/2 x 6 x 10 inch baking dish. Dot with butter.

TOPPING:

Mix 1 cup pancake mix and 2 tablespoons sugar. Add 1 beaten egg and 1/2 cup milk to dry ingredients and stir until fairly smooth. Fold in 3 tablespoons vegetable oil. Drop by spoonful over fruit. Bake at 450 degrees (or less) for 25-30 minutes. Serve warm with whipped cream or Cool Whip.
