PINEAPPLE UPSIDE DOWN | |
1/2 tsp. salt 1 1/2 tsp. baking powder 2 c. flour 2 eggs 8 maraschino cherries 1 c. sugar 2 (8 oz.) cans sliced pineapple, drained, save 3/4 c. juice 3/4 c. butter, softened, divided 1 (12 oz.) pkg. (2 c.) Nestles Toll House butterscotch flavored morsels, divided Preheat oven to 350 degrees. Place all these in a bowl flour, baking powder and salt. In 10 inch cast iron skillet over low heat. Combine 1 cup of Nestle Toll House butterscotch flavored morsels and 1/4 cup butter. Stir until melted and mixture is smooth. Remove from heat. Arrange pineapple, maraschino cherries in skillet. In large bowl combine sugar, remaining 1/2 cup butter and eggs; beat until creamy. Gradually beat in flour mixture with reserved 3/4 cup pineapple juice, stir in 1 cup butterscotch morsels. Pour over pineapple. Bake at 350 degrees for 35-40 minutes. Invert onto serving plate immediately. |
