RUSSIAN SAUCE FOR ANGEL FOOD
CAKE
 
3 egg yolks

Beat until thick and light. Add:

1 c. white sugar
Rind and juice of 1 orange

Cook in double boiler. Stir constantly 15-20 minutes or until thick. Chill. (This may be made ahead of serving and stored in refrigerator.) Serve with:

1 c. cream, whipped

Add:

1/2 c. blanched almonds, toasted and chopped

Serve over a piece of angel food cake.
