CAULIFLOWER SUPREME | |
2 c. cauliflower flowerets 1 c. sliced celery 1/3 c. chopped onion 1/2 c. green or red sweet pepper 2 tbsp. butter 2 tbsp. flour 1/4 tsp. salt 1/8 tsp. pepper 1 c. milk 1 (3 oz.) pkg. cream cheese 2 tbsp. fine dry bread crumbs 2 tbsp. Parmesan cheese 1 tbsp. butter Cook cauliflower, celery, onions and green pepper in lightly salted water until crisp tender (about 5 minutes). Melt 2 tablespoons butter in saucepan, stir in flour, salt and pepper. Add milk; cook and stir until thick; cook 1 minute more. Add cubes of cream cheese to sauce; stir until melted. Mix with drained vegetables. Place in casserole and heat. Combine bread crumbs, Parmesan cheese and melted butter. Top casserole with crumb mixture. |
