PINEAPPLE BREAD PUDDING | |
1/2 c. butter 1/2 tsp. ground cinnamon 1 (13 1/4 oz.) can crushed pineapple, drained 2 c. 1/2 inch bread cubes 1/4 c. nuts 1 c. sugar 4 eggs Beat butter, sugar, and cinnamon in a large mixer bowl at medium speed, scraping bowl 1 minute. Add eggs; beat at high speed until mixture is light and fluffy (about 2 minutes). Fold in pineapple, bread cubes, and nuts. Pour into buttered 1 1/2 quart casserole dish. Bake at 325 degrees for 40-45 minutes or until knife inserted into center comes out clean. |
