SQUASH CASSEROLE 
2 eggs, slightly beaten
3 c. cooked squash, drained and mashed
1/2 tsp. black pepper
1 c. chopped onion
3/4 stick butter, melted
1 to 1 1/2 c. herb stuffing (1 c. crackers)
1 tsp. salt
1 can cream of chicken soup
1 c. grated cheese

Preheat oven to 375 degrees. Grease 9x13 pan.

Mix all ingredients. Pour into greased pan. Sprinkle top with additional 1/2 cup of herb stuffing (or crackers). Bake 40 minutes. Serves 10.
