FRENCH COCONUT PIE 
3 eggs
1 tbsp. flour
1 1/4 c. sugar
1/4 c. buttermilk
1 tsp. vanilla
6 oz. frozen coconut
1/2 c. butter

Beat eggs. Add sugar and flour then stir. Add the remaining ingredients. Bake on 325 degrees in 2 unbaked pie shells for 40 to 45 minutes.
